Creamy Cantaloupe Soup

A refreshingly cold soup for summer. Easy to make- it takes longer to clean the cutting board and blender than to prepare it.

This is no wimpy hot dog. Usinger’s certified Angus beef frank, Sendik’s hot dog bun, topped with chili/corn mixture and sauerkraut.

I’ve done this Cook's Illustrated recipe before without add-ins and it is my favorite regular pancake recipe out of 19 tried. So it was no surprise the berries and nuts made them that much better.
2 cups milk
1 Tablespoon lemon juice
2 cups unbleached all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 Tablespoons sugar
1 egg
3 Tablespoons melted butter, slightly cooled
Makes a dozen
1) Mix lemon juice and milk, allow to thicken
2) Whisk dry ingredients together
3) Add egg and butter to milk mixture
4) Make well in dry ingredients and add wet
5) Briskly mix together, keep lumps and streaks of flour
6) Heat skillet on medium heat for 5 minutes
7) Add batter by ¼ cup, cook until bubbles break, about 1 ½ to 2 minutes per side
8) Add blueberries, etc before flipping

Just curious: What makes the creamy cantaloupe soup creamy? Don't worry about posting the entire recipe in detail, but I'm just curious about the basic formula here. I have had cold cantaloupe soup before, but it was more of a straight puree and not creamy so I'm curious about what exactly was added to cream it up and if there is any special ingredient in it that would be surprising. Thanks!
