Three-Alarm Sloppy Joes

This easy recipe requires simmering barbecue baked beans, diced tomatos, garlic powder and chili powder. This minimal effort results in a thick and hearty mixture that goes well with a wheat roll and a picnic table.


Cottage Cheese Pancakes

Category: Pancakes
Rating: Very Good

Crunchy exterior, creamy interior, atypical good taste. I found this recipe in the latest issue of Gourmet magazine:

1 cup cottage cheese
4 eggs
½ cup flour
6 tablespoons unsalted butter, melted

Combine all ingredients in a food processor and pulse until just combined, will be lumpy. Heat a griddle to 375 or skillet on medium-low heat. Add batter by 2 Tablespoons and cook until golden brown, 2-3 minutes each side. Makes 18 3” pancakes. Enjoy!


California Turkey Burger

Having a nice grill I'm going to start to be better at using it. This summer's first use yielded a ground turkey breast patty with a nice crust held together by eggs and bread crumbs. This patty also contains mustard and seasoning for extra flavor and cilantro to lend garden freshness. Finished with Monterey Jack and grilled red bell pepper.


Mocha Ice Cream Sundae with Coffee-Caramel Sauce

Ahhh…a sundae. That summertime treat of ice cream and toppings. In this variation it was coffee, vanilla and chocolate ice creams topped with coffee-caramel sauce, fresh whipped cream and raspberries. The sauce made with espresso was a little strong for this non-coffee drinker so I bet coffeeholics would have liked it better.

That turkey burger looks great! If you want a great turkey or beef burger, take whatever amount of meat you are using and douse it with Sriracha hot sauce (found at Sendiks or any other gourmet or Asian food store). Form patties, season with salt, pepper, and cajun seasoning and grill. It is hot, but delicious.
