Chocolate Apple Pancake Stack

The baked tartness of the apples (I used Red Delicious) played well with the deepness of the dark chocolate. They also had a unique texture gained from the shredded apple and a thick batter.
2 cups AP flour
1 ½ teaspoons baking powder
4 Tablespoons sugar
1 egg
1 Tablespoon butter, melted
1 ¼ cups milk
1 apple, peeled, cored and grated
1 ¾ oz. dark chocolate chips
1 Tablespoon cocoa powder
2 teaspoons corn starch
3 Tablespoons milk
1 ½ oz dark chocolate
1 Tablespoon butter
½ cup light corn syrup
¼ teaspoon vanilla
Pancakes
Sift together the flour and baking powder then stir in sugar. Make a well in the center and add the egg and butter. Whisk to make a fine batter. Stir in apple and chocolate chips.
Heat griddle on medium heat and pour 2 Tablespoons of batter spreading to make 3” round.
Cook until bubbles appear and flip cooking for one minute more.
Syrup
Mix cocoa powder and cornstarch then stir in milk. In a saucepan combine chocolate, butter and corn syrup and heat gently until well blended. Stir in cocoa mixture and bring to boil over low heat. Simmer for 1 minute.
Cream Cheese Cookies

Rating: Good +
With a yellow cake flavor backed by the tangy cream cheese a good portion of these were eaten right out of the oven.
Creamy Broccoli and Cheese
Category: Side
Rating: Good
This was a decent contrast of crispy, creamy and sharp; easily made.
8 ounces cream cheese
1 envelope ranch dressing mix
¾ cup milk
1 pound broccoli florets, cooked and drained
½ cup shredded sharp cheddar
Combine first three indrediants in food processor until smooth. Toss with broccoli, pour into 9 X 9 baking dish, top with cheddar and bake at 350 20-25 minutes or until cheese is melted.
