Pumpkin Pie Crumble Cake

Category: Cake
Rating: Excellent

Amazing. Served warm with a dollop of whipped cream. The crumble top isn’t only about texture (magnified with chopped pecans) but about a taste of yellow cake, butter and sugar. The filling benefits the most from being served warm and impresses as a richer, sweeter pumpkin pie. This is all carried by a soft cake crust.


Spud Skins with Bean Salsa

Category: Side/Entrée
Rating: Good

Nice use of a tato, but time consuming with long baking times. Salsa is the most prevalent taste in the salsa/corn/pepper/black bean/cheese stuffing.


Cinnamon Pancake Cubes

Category: Pancake
Rating: Very Good

A great quick recipe for leftover pancakes. The three ingredients infuse the pancake pieces with flavor then form a bit of a crust.

2 or 3 6” pancakes, cut into 1” cubes
1 Tablespoon butter
1 Tablespoon sugar
1/8 teaspoon cinnamon

Sautee everything in a skillet on medium-low heat for 3ish minutes until evenly distributed and heated through.

Wow, this sounds good. Never thought about doing something different with leftover pancakes. Not that I make lots of pancakes anymore, but always useful.
