Warm Broiled Banana with Apricot Jam

A quick kinda healthy dessert the banana goes nice and soft under the broiler.

Preheat broiler. Cut the ends off a banana then cut in half lengthwise. Broil for seven minutes or until brown and banana gives to a fork. Meanwhile gently heat 2 tablespoons apricot jam and ¾ teaspoon butter stirring well. Pour over banana and broil until bubbling, 1-2 minutes.

The Spanish rice seasoning was so prevalent in this dish it made it one-dimensional preventing it from being any better.

1 (6.8 ounce) package Rice-a-Roni Spanish Rice
2 Tablespoons butter
1 (16 ounce) jar salsa
1/3 cup sour cream
¼ cup thinly sliced green onions
4 eggs
1 cup shredded Cheddar
Chopped cilantro (optional)

1. In a large skillet over medium heat sauté rice-vermicelli mix with butter until golden brown.
2. Slowly stir in 2 cups water, the salsa and special seasonings; bring to a boil. Reduce heat to low, cover and simmer 15-20 minutes or until rice is tender.
3. Stir in sour cream and green onions. Make 4 indentations in rice mixture and break 1 egg into each. Cover and cook 8 minutes or until eggs are cooked.
4. Sprinkle cheese over top and let sit 3 minutes.
