Chicken, Mushroom, and Gruyere Grilled Sandwich

How can such great ingredients come together and result in such blandness?



Braised Baby Onions with Orange Juice and Balsamic Vinegar

Category: Side
Rating: Very Good

These cipolline onions go from almost spicy to sweet and pleasingly squishy tender after some high heat sautéing; with the liquids adding their acidic sweetness. If you make this be forewarned- it’ll mess up the stovetop and smoke up the house!



Raisin-Nut Baked Apple

Category: Dessert
Rating: Fair

At least it is an easy way to dress up an apple. Core out a golden delicious or Rome, fill with 1 tablespoon each of raisins and chopped walnut, drizzle with honey and cinnamon. Microwave until tender.



50’s-Style Creamed Chicken

Category: Entrée
Rating: Good

A rather classic dish this was creamy with a pronounced woodsy flavor presumably enhanced since I used fresh instead of the prescribed canned mushrooms.

1/2 cup chopped onion
2 teaspoon olive oil
10 oz chunk chicken breast, flaked
1 can cream of mushroom soup
6 oz can sliced mushrooms
1 cup sour cream
12 oz bag egg noodles, cooked

Heat oil on medium and cook onion until tender. Add chicken and cook for 1 minute. Add soup and mushrooms and simmer for 10 minutes. Add sour cream and cook until heated through. Serve over noodles.



Buttermilk Waffles

Category: Waffles
Rating: Good

As standard waffles go these are acceptable; especially if you are one that puts butter and syrup on them.
